It's the first of May and there are two reasons to celebrate:
First, it's our first day in Ilocos Sur on General Community Quarantine (GCQ). All praise to God! We have zero Covid Cases since the outbreak started here in the Philippines.
Second, it's that time of the year again to recognize the hard work of our labor force. Shoutout to all the frontliners out there who are working 24/7 to keep everyone of us safe.
So to celebrate, here's a very simple recipe for everyone, the Mango Graham Cake, and yes it doesn't require any baking expertise.
What you'll be needing are the following:
- 500g Nestle All-Purpose Cream
- 250g Condensed Milk
- Mango slices (cut into thin slices)
- Crushed Graham Crackers
Chill the all-purpose cream for at least 30 minutes. In a mixing bowl, combine the cream mixture with the condensed milk and whip using a hand mixer for about 4-5 minutes until it doubles in size.
It is recommended to use a transparent glass container in layering the cake.
To assemble: Layer the ingredients in the following order: crushed graham - cream mixture - mango slices.
I used a pyrex glass at around 5" x 10" with 2 layers of set ingredients.
Refrigerate overnight before digging in to the moist crushed graham combined with the smooth creamy texture of the cream mixture perfectly balanced by the sweetness of the mango slices.
